Steps to make Carrot Delight:
- Peel the carrots and slice them
- Boil 3 cups of water and add the sliced carrots to it. Boil until the carrots are done and soft
- Strain the carrots and retain the water in a container
- Grind the cooked carrots in a mixer in to a smooth paste
- Add corn flour to the water retained after boiling carrots and make a smooth paste
- In a pan add the carrot paste,sugar & corn flour puree.Mix well then lit the gas
- Keep stirring well till the mixture becomes thick. Before switching off the gas add cardamom powder to the mixture.
- Grease a flat container and pour the mixture in it.
- Rest the mixture for some time till it cools down
- Now cut the burfi in desired shape. Coat well with dessecated coconut and garnish with dry fruits powder
