- Wash the ponma, cut in small sizes, same with grilled Goat meat, add stockfish flakes too, season well and cook till they well tender, before you remove from heat, you can add in the already wadhed and shredded smoked fish so that it gets well spiced with meat..
- Add the meat stock into a small bowl, add the Baking powder and pour in the 1/2 cup of palm oil, next mix well. You will have this thick reddish Sauce.
- Next add the grinded fresh pepper, onion, crayfish Ukana and the already cooked and season meat, stockfish, Ponmo and smoked fish, add salt,and some black pepper..Stir it up properly..
- Place the pot and low heat, this allows the Meats to sock up the sauce, crumble the stock cube over and lastly add the sliced or shredded Utazi leaves over it and give it the final stir..And voilร the Ukana Sauce is ready
