  1. Take Handful Blanched African Spinach (Alayahu/Efo)
  2. Prepare 2 Tablespoons roughly blended pepper and onion mix
  3. Prepare 2 Tablespoons Olive oil
  4. Take cube Seasoning
  5. Make ready 1 Small Onion (Diced)
  6. Make ready 1 Teaspoon garlic paste

Oversteaming separates the moisture from the leaves and results in mushy, gloppy spinach. Turn the heat off and stir in the salt, pepper, lemon juice, and butter. You can also reserve the butter for topping the spinach after you remove it from the pan, as I do in the video. It makes for a pretty presentation.

Instructions to make Steamed vegetable (African spinach):
  1. Place a pan or pot on a medium flame, add the oil, saute the onion and garlic for about 3 minutes. Add the pepper and onion mix. Stir fry for about 5 minutes until cooked.
  2. Add the blanched vegetable and seasoning cube to taste. Stir and take off the heat. Serve on the side with rice, spaghetti, moi moi, macaroni, yam, potatoes……………
  3. Check by previous vegetable soup post to see how I blanch by vegetables and still maintain the green colour.

You can also reserve the butter for topping the spinach after you remove it from the pan, as I do in the video. It makes for a pretty presentation.
