The ingredients needed to make Traditional Carrots-Jaggery Rice:
  1. Get 1& half Cups Long Grain Rice
  2. Prepare 200 g Jaggery or to taste
  3. Get 1 cup water for the syrup
  4. Make ready 1 tbsp milk
  5. Make ready 4medium Carrots grated
  6. Make ready 3 tbsp Ghee or Clarified Butter
  7. Make ready 1 tbsp Fennel Seeds
  8. Take 1/2 tsp Cinnamon powder
  9. Prepare 1 tbsp Melon seeds kernels
  10. Make ready 1 tbsp mint juice
  11. Make ready 1/2 Cup Mixed dried fruits (blanched almonds, raisins, chopped dates,cashews)

Steps to make Traditional Carrots-Jaggery Rice:
  1. Soak Rice in Water for an hour.
  2. Wash and Grate Carrots and keep aside.
  3. Blanch Almonds and remove their skin and cut them into halves. Also deseed and chop some dates. You can also add raisins and cashews or desirable dry fruits.
  4. Now boil rice and strain.Keep aside.Dip small amount of rice in mint juice for green coloured rice.
  5. For the syrup, in a pan heat one cup water and when it comes to a boil add jaggery. Keep stirring and let the jaggery melt in water.
  6. Add a spoonful of milk and a scum will form on top. Spoon out the scum and throw it away. That's the impurity in jaggery which we don't want to add to the rice. Turn the flame off and keep the syrup aside.
  7. In a pan add ghee and when ghee melts add fennel seeds,cinnamon powder,cardamom seeds. Let them crackle that is when you add grated carrots to the pan and saute in ghee for a minute..
  8. Add the dried nuts which we had chopped earlier.
  9. Add boiled rice.
  10. Lastly add the jaggery syrup and cover with the lid.Keep for 8-10 minutes on simmer flame.Now Switch off the flame.Add the rice which are dipped into mint juice.Mix with fork.
  11. Transfer into a serving bowl.Garnish with some more chopped dry fruits.Serve it hot and enjoy the winter.
