Steps to make Sarkkarai Pongal/Sweet Pongal:
- In a large vessel add some water. When it starts to boil, add the washed rice. Cover and cook till the rice gets cooked.
- Remove the excess water using a laddle/spoon.
- Let it boil till the rice becomes little mushy. Keep the flame in medium.
- In another pan add the jaggery and 2 tsp water. Let it melt. Switch off the flame and strain to remove impurities.
- Add the melted jaggery to the rice, mix well and let it boil in low flame.
- In another pan, add ghee. Once ghee gets heat add cashews and kismis. Fry in medium flame.
- Now add this to the cooked rice. Add elachi powder and mix well. Switch off the flame.
- Transfer to a bowl. Now it's ready to serve.
