I have made many Gujrati Thalis with different menus, but this Thali is special. This is a Thali which I cooked at our hotel with the help of my chef. In the above picture,I have plated Rice,Methi thepla,Moong Dal khichdi,Dahi kadhi,Gujarati Sev Tameta nu Sak / Sev and Tomato Curry,Green chilli pickle,Masala chaas,Oven roasted papad & curd.

The ingredients needed to make Mini Gujrati Thali:
- Take 1 cup Kadhi
- Take 3tbsp fresh curd
- Make ready 1 tbsp ginger garlic & green chilli paste
- Take 1 tbsp Besan(gram flour)
- Take as needed coriander leaves
- Take 1 tbsp sugar/jaggery, coriander leaves
- Get 1 tsp cumin
- Get 1 tsp mustard seeds
- Make ready as needed curry leaves
- Make ready as needed oil/ghee
- Make ready 3 mangoes
- Get to taste sugar
- Get 3-4 tbsp milk
- Get 2 cups flour
- Get 1/2 cup gram flour( besan)
- Take as needed oil
- Take 1 pinch Hing,
- Get 1 tsp carrom seede (ajwain)
- Prepare 1 tsp jeera/ cumin powder
- Get 1/2 tsp turmeric powder
- Prepare to taste salt
- Make ready Ingridients for aam ras
- Take Masala Puri
- Get 2 green chillies
This is a mini-thali served at the Rajdhani (gujarati food restaurant) counter at Infiniti Mall in Mumbai. I didn't like the traditional Gujrati thali at Jalaram Gujarati Thali and Snacks. A combination plate of one veggie curry, rice, dal ( lentil soup), papad, spicy pickle and one sweet. Indian thali is a wholesome meal that has several dishes on a single plate.
Instructions to make Mini Gujrati Thali:
- Gujrati Kadhi Mix curd & besan well using a whisk. Add water & see no lumps are formed.
- Heat oil in a pan. - Add the tempering. - Add curd mixture. - Add chilli paste, jaggery, salt. - When it boils let it cook on slow flame. - Last add coriander leaves
- Remember never to boil the kadhi on a high flame as it tends to curdle.
- Aam ras - Fresh chilled mangoes, sugar & milk. Basically it's mango pulp. Some people add ginger powder or saffron - But I just like mine to be simple pulp.
- The taste and flavor of aamras is totally depends on the type and quality of mangoes that you use. Alphonso or Kesar mangoes are highly recommended for making aamras.
- For Masala Poori - Wheat flour, besan - Salt, turmeric,chilli powder, garam masala powder, ajwain, crushed green chillies, jeera powder & oil. Knead well. Fry the Puris & serve with Aam ras.
