  2. Make ready Steamed Rice 1 katori, elachi for flavour

  1. Heat the milk in the pan. When the milk comes to boil add sugar and 2-3 elachis for flavour. and if you want to make the kheer with raw rice then add the rice along with the sugar. I am using steamed rice par cooked so when the sugar is mixed well and the milk is about to thicken add the steamed rice.
  2. Mix it gently. Keep on stiring the kheer with light hands till the rice is cooked and mixes well in the milk.The gas should be on medium flame.
  3. Turn off the gas and let the kheer cool down to room temperature. Garnish it with nuts
  4. To make it more special cover the kheer with a net or channi and keep it on the terrace under the full moon especially on sharad Purnima so that the moon rays fall on the kheer. Keep it overnight under the moon light but make sure to keep it on height do that cats or other animals should not spoil it.
  5. Tip : The kheer tastes best when consumed without heating.
