Masa (Hausa Masa) is a popular meal in the Northern Region of Nigeria and it is often refered to as sinasir or Waina. I used a variety of 'Tuwo' rice known as sinasir, of broken short grains.

- Prepare 3 and half cups of rice

- Place the rice in a bowl,add enough water to completely submerge the rice and leave to soak between 6-8 hours or leave over night - Drain off the water and rinse the rice
- Note:There is a special type of rice for this recipe iys called (Shinkafar tuwo)Tuwo rice and the closet substitute for the rice is jasmine rice - Once you are done with rinsing the next step is to blend the soak rice together with the precooked rice and add some water to blend
- Proof the yeast by adding some warm water into a bowl and let aside - Add salt,sugar to the rice batter - Add the proofed yeast to the rice batter - Add potash if the batter is sour - Add baking powder
- Stir in together until all the ingredients are well combined - The resulting batter should not be too thick, otherwise the the cake will tough - Now cover it up and allow it o proof for 1-2 hours
- Place a nonstick pan (preferably)add a liltle bit of oil and wait for it to get a liltle hot then pour in the batter and cover it for like 2mins once the cake begins to solidify you will see some little bubbles on top of the cake then its time to flip - Allow to cook for about 3-4 mins more mins then take off the cake
- Repeat this process until you have exhaust the rice batter
- Rice cake can be serve for breakfast with jam,honey or for lunch with vegetable soup,hot spicy sauce - I serve mine with my favorite veg soup - Let me know how you like to serve your meal in fhethe comment section
