- Remove the methi leaves from the stems of the methi leaves. Wash the leaves properly in running water. Remove in strainer and keep aside to drain all the water. If leaves are very bitter then sprinkle some salt on leaves, mix well and keep aside. After 10 to 15 mins squeeze the leaves gently with palms and rinse once again and keep in a stainer.
- Heat up the oil in a pan or kadhai on medium flame. Add mustard seeds and let it splutter. Once it splutter add hing and chopped onions. Saute till onion turns translucent.
- Add chopped garlic and cook for a minute or two till raw smells goes. Then add chopped tomatoes and green chillies slit, mix well add turmeric powder, red chilli powder, coriander cumin powder and salt. Mix well and cook till tomatoes are cooked well.
- Add green peas, mix and cook for 2 to 3 mins. Further add washed methi leaves, mix well and add boiled potato cubes. Mix all well and cook for 2 to 3 mins. Switch off the flame.
