- First you have to take a pan and put 3 tablespoon of oil in it. On other hand, keep the potatoes for boiling in the cooker. Let the oil heat at a medium flame for few seconds. You have to squeeze tomatoes and remove its paste.
- Then add jira in the oil and let it crackle for some minutes. Then add pinch of asafoetida. The next step is to add tomato paste.
- The next step is to to add 1/2 teaspoon red chilli powder in the tomato paste for color and let it cook for few seconds. Now add 1/2 teaspoon turmeric powder, 1/2 teaspoon coriander powder, 1/2 teaspoon amchur powder and 1/2 teaspoon garam masala. Let all the masala powders saute for few seconds in the oil at low gas flame.
- Now, remove the boiled potates and remove its skin and cut them into half pieces. Then add potatoes pieces in the oil mixture, add ginger paste and mix properly.
- The next step is to add salt and remaining masala powder in the mixture and let the mixture saute for 2-3 minutes. Add 3-4 tablespoon of water in the mixture and cover the pan.
- Finally, remove potato sabji in the bowl and serve it with fresh coriander leaves.
