Instructions to make Dhudh Burfi:
- Boil 1litre of milk.
- Mix 2 tsp of water and 2 tsp of lemon juice.
- Once the milk is boiled put off the flame.let it rest for 15 minutes.
- Now add this water lemon juice mixture to this milk, one spoon at time and stir the milk.
- Add lemon juice mixture till the milk start curdling with a continuous stir. Now the paneer is done.
- Now strain the paneer in a strainer and wash the paneer properly 2 to 3 times so that sourness of lemon juice is removed.
- Keep it aside. Now take the left 2liters of milk in a wok and make a rabdi type of mixture while stirring continuously on a medium flame.
- Now add the washed paneer to this rabdi. Add sugar and cardamom powder.
- Now continuously stir it till the mixture thickens and leave the edges of the wok.
- Now grease the plate and add this mixture of dudh and paneer to the plate.Tap it properly till it levels cleanly.
- Add chopped pistachio and almonds.keep aside till it cools down and cut it into any shape of your choice.
- Here is the mouth watering Doodh burfi in your plate.Enjoy it.
