The ingredients needed to make Welsh rarebit:
  1. Make ready 50 g x plain flour
  2. Get 50 g x butter
  3. Get 400 ml x stout or ale or cider
  4. Make ready 1 tsp English mustard
  5. Make ready 1 x tsp chilli powder (optional)
  6. Prepare 1 x tbsp Worcester sauce
  7. Make ready 3 x egg yolks
  8. Get 300 g x strong mature cheddar cheese
  9. Prepare 3 x spring onions (optional)
  10. Prepare Rustic bread of your choice for topping

Welsh rarebit is a traditional snack, ideally based on locally produced Cheddar or Caerphilly cheese, melted and mixed with butter and cream or ale, then poured over a piping hot, buttered toast.   5. Season with pepper but be very careful with salt you probably will not need salt. Add the spring onions and then the egg yolks and continue to cook over a low heat for a minute or 2.
  6. Pour cheese mix into a bowl and let it cool to room temp, or you can keep for days in the fridge. Cut thick slices of bread drizzle with olive oil and season before grilling (toasting) both sides.
  7. Spread the mixture thickly on the toasts, place under a hot girl / broiler for as long as it takes for the mixture to be golden and bumblingly hot. Serve on a plate or and with a pallet knife press a crisscross pattern, this is for optional extra Worcester sauce to sit in.
