- In a wok heat 1 Tbsp olive oil and add rest of the garlic. Sauté for a min and add the chopped spinach. Sauté for 2-3 mins. Set aside
- Cool the spinach and drain out all excess water again. Add to the yoghurt. Mix very well
- Before serving add to a bowl and garnish with chopped pistachios, drizzle with lot of olive oil and add the mint leaves. Enjoy with Roti
