  1. (Choley):- Firstly, heat oil in a cooker, saute bay leaf, cardamom, cinnamon stick and cumin seeds. Add onion and ginger garlic paste saute till it turns light brown.
  2. Add tomato paste and saute till they strt releasing oil. Add all the spices mix well, cook for 1-2 minutes. Add boiled chickpeas and 2 cup water give a good mix. Pressure cook for 2-3 whistle on medium flame. Allow the pressure to release by itself sprinkle Coriander leaves. Ready
  3. (Puri):- Take a bowl add wheat flour, salt, oil, carom seeds, pinch of turmeric powder combine well add water and knead stiff dough. Cover and keep aside for 15 minutes. Divide the dough into equal portions make balls and roll out into round puri shape.Heat oil in a deep kadhai or pan fry puris till they turn golden brown in colour from both sides. Drain the puri on kitchen towel. Ready
  4. (Rice):-Take a pan Boil water after 5 minutes add salt and Rinsed rice stir well cook on medium flame till cooked completely. Drained excess water. Ready to serve.
  5. (Boondi Raita):- Take a bowl whisk curd add salt, cumin powder, red chilli powder and add soaked boondi, coriander leaves mix well sprinkle little chaat masala Ready.
  6. (Beetroot Raita):- Take a blender add 1/2 cup grated beetroot add little water blend till smooth. Take a bowl add curd and beetroot mixture whisk well. Add salt, black pepper powder, chaat masala, boondi mix well. Ready.
  7. (Coriander Chutney):- Take a blender add all ingredients blend till smooth. Ready

It also goes well with biryani or pulao or any rich based dishes like jeera rice. Palak puri is a wonderful breakfast idea, the colour is just from palak but so vibrant and appealing.
