- Prepare 200 gms Gram flour
- Prepare 1 Bottlegourd

- Take as required Oil for frying as well as for gravy
- Take 100 ml water
I had never heard nor knew that a curry is made from bottle gourd koftas. Lauki ke kofte-a vegan curry from India. Every Kofta can be enjoyed with gravy in the main course or in the dry form as a snack. Whenever I make this kofta curry, I always keep some dry koftas aside for.
Steps to make Lauki ke Kaufte with Gravy:
- For Kofte/ Pakoras
- Add grated bottle gourd in a bowl.
- Add gram flour into the bowl.
- Add all the spices mentioned above into the flour by reducing the quantity to 1/4th.
- Add 1/2 cup water to the flour and make a thick paste. Rest in for 10 minutes.
- After 10 minutes, deep fry the koftas in medium hot oil.
- Keep aside the pakoras until the gravy got ready.
- For gravy
- Saute garlic, onion, green chillies, ginger, tomatoes in oil just for 2 minutes.
- Make a paste out of it. Heat 1/2 oil in pan.
- Saute cloves, black pepper, cinnamon, cumin seeds and chopped onions, green chillies, chopped garlic, and then add the paste into the pan.
- Add all the spices mentioned above into it and cook it for 10 minutes more. Add curd to it.
- After adding curd cook it for 2 minutes more.
- Then add koftas and Lauki Kofta curry is ready to serve.
Every Kofta can be enjoyed with gravy in the main course or in the dry form as a snack. Whenever I make this kofta curry, I always keep some dry koftas aside for. In this Lauki Kofta Curry recipe, deep-fried koftas (round shaped deep fried spicy dumplings) made of grated bottle gourd, gram flour, rice flour and ginger-garlic paste are cooked in spicy gravy of tomato and cashew nuts. Add the lauki water and make the gravy of desired consistency. Garnish with slit green chillies and fresh finely chopped corander.
