Jollof rice (party rice) can be prepared with vegetables like carrots, green beans, peas, cabbage and green bell peppers or without any of the listed vegetables and can be served with plantain,moi moi, fried potato chips and soft drinks. You will be right if you spice it up with ginger, garlic,nutmeg, curry.

The ingredients needed to make Jellof rice with vegetables:
- Get 2 cups rice
- Take 4 piece carrots
- Prepare 2 handful Green peas

Bring to a boil, then reduce the heat to low and cover the pot with foil and a lid. Jollof Rice is a lovely one-pot rice dish that's popular in West Africa. Each country - specifically Nigeria and Ghana - has its own versions of Jollof. Once cooked through, serve alongside vegetables or a protein of choice.
Steps to make Jellof rice with vegetables:
- Boil 3 cups of water,as is boiling add the rice.
- Boil for 20minutes,drain water and wash keep it.
- Blend tomatoes,Fresh pepper,Ginger and garlic.
- Wash and slice cabbage,carrots
- Boil liver with salt,onion,Maggi cubes.boil for 10mintues.
- When the meat is done allow it to cool then cut it in tiny pieces.
- Boil the blended tomatoes and pepper till there is no water.
- Put pot on fire,pour in groundnut oil onces is hot add sliced onion.
- Fry for 1minute and pour in the tomato paste.
- Fry for 4minutes and be stirring pour in the liver with the water and boil.
- As is boiling add Maggi,Curry,Salt and keep boiling for about 5minutes.
- Pour in the rice stir very well and cover to boil.
- Check as is boiling if more water is needed.add a little more if necessary.
- Sprinkle curry as is boiling.
- Onces is almost done pour in the cabbage,carrots,green peas.
- Don't cover stir very well and allow the water to dry.
- Food is ready. Enjoy!
